How To make meringue cake delicious and very tender.



200 gr. proteins, this is about 6 eggs,

300 gr. powdered sugar, or sugar lightly crushed with a coffee grinder,

2 tbsp corn starch,

citric acid on the tip of a knife

chopped nut (I have almonds).


250 gr. cream 33% (cold),

250 gr. mascarpone or other cream or curd cheese,

50-60 gr. powdered sugar.


Fresh strawberries.

– How to cook:


Beat the whites for 1 minute on medium power, then gradually add the powdered sugar and vanilla sugar. Set the mixer speed to maximum. Beat until firm (hard peaks state). Reduce speed again. Add citric acid and starch. Stir. Put on a baking sheet covered with parchment, smooth over the entire surface of the baking sheet. Sprinkle with chopped nuts on top. Bake in a preheated oven at 150 * C – 20-30 minutes until golden brown. Take it out, turn it over to another sheet of parchment, remove the bottom one. Cool down.


Combine everything, beat. 


It’s that simple! After baking, I cut the meringue cake into 4 identical layers, greased each of them with cream, laid the berries and covered with the next layer. It turns out everyone is familiar with a rectangular shape.

Remember! The cake is very tender and needs to be eaten immediately!
